Born to an Italian-American father and a Vietnamese mom, it’s no wonder chef Michael Bloise has so readily made the transition to Executive Chef at South Beach’s SushiSamba where the menu features a fusion of Asian and Latin American fare. “I’ve always had fun challenging myself to harmonize ingredients that are not commonplace, ” says Bloise. “I’ll continue this philosophy and now have three exciting cultures – Japan, Brazil and Peru – to further fuel my imagination.” Dining on Lincoln Road Mall has just gotten a lot more interesting.

Calling his cooking style playful, balanced and deliberate, SushiSamba’s new chef trained at South Beach’s Tides Hotel, at the Loews Hotel’s Gaucho Room and also received 4 Stars and 4 Diamonds during his tenure as Executive Chef at the Hotel’s romantic garden restaurant Wish! He comes to SushiSamba after a brief stint at American Noodle Bar, a popular but short-lived Asian street food restaurant on Miami’s Biscayne Corridor. With three branches in New York, two in Las Vegas and locations in Chicago and London, the SushiSamba chain has crafted a successful formula that combines sushi bar favorites with a curious amalgam of Latin American cuisine.

Bloise seems well suited to the busy Lincoln Road location with it’s bright orange decor, late night Cosplay parties and heavily trafficked sidewalk tables. Cooking to the beat of club-style music, his menu offers familiar Asian appetizers like edamame and miso soup plus chubby dumplings filled with braised oxtail alongside piquant seafood ceviches and tiraditos. Locally-sourced fish is served fresh from the raw bar, bundled up in cleverly composed maki rolls and shrouded in crisp, flash-fried tempura batter. Heartier appetites are easily sated with steaks – both churrasco and American Wagyu – or a perfectly crispy whole Florida snapper. Because this is South Beach, a unique variety of fruit-juicy house signature cocktails join saki and shochu on the menu. And because this is South Beach, SushiSamba dromo moves to a party beat seven days and seven VERY late nights a week!
