DaSilva. A Brazilian ex-pat who has called South Florida
home for over 20 years, DaSilva spent her childhood
helping out at her family's restaurants, went on to
earn her Culinary Arts degree and served many years
as Chef de Cuisine at 3030 Ocean - one of Chef Dean
James Max's most successful ventures.
Years into her 3030 tenure, DaSilva
took the strategic risk of an appearance on FOX network
reality cooking show "Chef Gordon Ramsay's Hell's Kitchen,"
where fans cheered her rise to the top. Soon afterward,
her work was recognized by the local press where she
was named "Best Celebrity Chef of 2009" and one of the
"Top 40 Under 40" by Gold Coast Magazine. While local
notoriety is an essential ingredient in the rise of
any professional, it is the invitation to serve as a
guest chef at the James Beard House in New York City
that is the high point of DaSilva's remarkable trajectory.

Now a seasoned restaurant professional,
Chef DaSilva crafted the concept for the Eden Roc's
1500 Degrees Restaurant by working closely with local
Florida farmers and fishermen to be certain that every
element of her changing seasonal menu is the best representation
of available ingredients. While Miami Beach real estate
is nearly priceless, the chef has her own vegetable
and herb garden thriving on the resort grounds. Start
with a variety of small plates like pork belly tacos
