Tanaka, an elegant Japanese restaurant helmed by Chef
Hiroyuki "Zama" Tanaka, who honed his sushi skills
working under Iron Chef Masaharu Morimoto. Tanaka got
his start cooking on a US army base in Japan and went on
to work at Genji Sushi Bar at the Ritz Carlton in
Philadelphia while he attended Temple University. Once
he opened his own restaurant, critics lauded his
creative production of signature maki rolls and gave him
the prestigious "Best of Philly" award.
The tiny jewel box sushi restaurant
seats just 36 discerning patrons in it's slick black and
white interior. Belly up to the black onyx sushi bar and
check out Tanaka's custom creations of crispy shrimp,
scallions and carrot or a smoky combo of eel, spiced
mayo and creamy avocado salsa. The Shelborne bar also
features boutique sake brands and a variety of inspired
cocktails spiked with yuzu and lime.
Much like the extensive updates to
the landmark Art Deco property, Bar Tanaka promises to
bring a modern twist to traditional Japanese recipes.
With a reputation for riffs like Philly cheesesteak
rolls and escargot napped in miso butter, the chef's
culinary aspirations for his brand new South Beach
eatery should be as impressive as the hotel's bold
