Bianca restaurant at the Delano is the latest incarnation of fine dining at Miami Beach's premier oceanfront destination hotel.

Executive chef Brian Massie promises “local, farm to table organic ingredients” with an eye toward the Slow Food movement which encourages sustainable regional cuisine from the local ecosystem.

Chef Massie's modern Italian fare includes signature dishes such as Truffle Tagliatelle - house made pasta with fresh Peidmonte truffles shaved tableside and served in a light Parmesan sauce, and imported wood-grilled langoustines seasoned with Amalfi lemons.

The restaurant area has been expanded to encompass the main dining room, lounge, veranda and lobby on the Delano's ground floor.

But dining is only the opening act at Bianca. In acquiring Las Vegas-based Light Group, the Delano has also acquired the services of South Beach alumni, Chris Paciello who rose to fame in the 1990s with nightclubs such as Risk, Liquid and BarRoom. Chris will soon be running the Food & Beverage operation at the Delano including the new FDR lounge in the former Florida Room underground space, all of which portends high excitement for those familiar with South Beach's celeb-infused atmosphere of the 1990s. Glamour returns with a vengeance this winter season at the Delano, and our guess is that Bianca Restaurant will be the focal point of the show.

The Delano's Blue Sea sushi bar remains a separate communal dining experience featuring sushi classics from chef Massie.
