David Bouley
Evolution
(Closed) David Bouley brings real New York Culinary Firepower to South Beach with his first 5-star SoBe restaurant at the luxe Ritz-Carlton Hotel on Lincoln Road. The setting, designed by internationally acclaimed architect Jacques Garcia, is simply glamorous. Glass murals, great lighting and comfortable seating make the 7000 square foot space feel truly intimate. Service is attentive, knowledgeable and efficient. But what impresses most is the seemingly boundless devotion to the food. Local markets drive the evolution of the menu. Best option is to try the chef's tasting menu, a preparation that can be paired with wines selected to compliment each course. Everything - from the breadbasket right through to the sweet breakfast bread gifted to the table as a take home treat - is simple, thoughtful and delicious. Best of the menu is surely the sweet, buttery Cape Cod lobster. Seafood stars also include herbed scallops and a rich black sea bass. If the sheer size of a full gourmet dinner is daunting, or you'd prefer to sample rather than sup, try the second menu available in the beautiful bar featuring Japanese sushi and sashimi. While it might be tempting to refer to the East-meets-West cuisine as Asian/French, Bouley insists that the menu treats the different cultures with integrity, not the "confusion of fusion..."
A simple truth remains; for a truly memorable meal, David Bouley
Evolution is one of the top destinations in the city.
