For most of us, Chinese
food is the staple of mom's night off, a convenient meal
that's best eaten right out of paper takeout cartons while
watching a good movie on the couch. Redolent of salt, fat
and some kind of pork, we crave the crunchy noodles and
steamy won tons of our youth when the day proves too taxing
to bother making dinner.
Chef Lok Soon Ooi turns that notion on it's
head at Hakkasan, his sleek and seductive new dining room
high atop the spa building at the Fontainebleau Resort where
the hostesses wear haute pink Alexander McQueen and the menu
is far more Michelin than takee-outee.
This is not your Mama's
Chinese restaurant. Lok Soon Ooi elevates the humble dumpling to an
art form and offers his best little bundles as starters at
dinnertime or as the star of his brunch time dim sum service
Saturdays and Sundays from noon until 3pm. It's not
necessary to order the most extravagantly priced dishes to
experience the kitchen's best work. Any of the inspired duck
dishes will do. Each duck is stuffed with herbs and served
with perfectly crisp skin.
If you are unfamiliar with
the menu's offerings, create a tapas style dinner with any
of the starters and a pot of jasmine tea and graze until
everyone is convinced that Hakkasan redefines the notion of
a Chinese dinner once and for all.
